Keto tortilla with ground beef and sauce

Indulge in a mouth-watering tortilla filled with hearty meat and cheese. If, in addition to this dish, you bake keto bread and also prepare a Texas-Mexican spice mix, then the dish will not only be incredibly tasty, but also healthy!

Ingredients

  • Low carb tortillas

  • 2 pcs Egg

  • 2 pcs Egg white

  • 150 g Cream cheese

    softened cream cheese

  • 0.5 tsp Salt

  • 1.5 tsp psillium

    psyllium husk powder

  • 1 tbsp. l Coconut flour

  • Filling

  • 450 gFarsh

    ground beef or lamb at room temperature

  • 2 tbsp. l olive oil

  • 2 tbsp. l Spices

    texas mexican spice mix

  • 125 ml Water

  • Salt and pepper

  • Salsa (sauce)

  • 2 pcs Avocado

    diced avocado

  • 1 pc tomato

    diced tomato

  • 1 pc lime juice

    citrus lime juice

  • 1 tbsp. l olive oil

  • 120 mg cilantro

    fresh chopped cilantro

  • Salt and pepper

  • One serving

  • 350 mg Cheese

    grated Mexican cheese

  • 75 g Lettuce

    chopped lettuce leaves

Just before frying the minced meat, remove it from the refrigerator to warm it up to room temperature. Otherwise, the cold minced meat will cool the hot pan during frying, and then it will be stewed, not fried.

Low carb tortillas

Preheat oven to 200 ° C.

Use a mixer with a whisk to whisk the eggs and egg whites into a firm foam, which will take a few minutes. In another bowl, grind the cream cheese until smooth, pour the beaten eggs into it. Then beat the mixture thoroughly until the eggs and cream cheese form a homogeneous mass.

Add coconut flour, psyllium and salt to a small bowl and mix thoroughly. Add the resulting dry mixture gradually, one spoon at a time, to the batter from Step 2, stirring continuously. The dough should not be very steep.
Cover the bowl of dough with a clean towel and let it "rest" for a few minutes, or until it thickens. The length of time will depend on the quality and brand of psyllium you are using.

Take out two baking sheets, place a sheet of parchment paper on each of them. Using a spatula, spread the dough evenly over them in the form of 4-6 circles or 2 triangles. The thickness of the dough should not be more than 6 mm.

Bake the tortillas on the top rack of the oven for 5 minutes or more, until the edges of the tortillas begin to turn brownish. Be careful not to burn the tortillas.

Filling

Place a large skillet over medium heat and heat some olive oil. Put the minced meat in a frying pan, fry it until fully cooked.

Add water to the minced meat, add the Texas-Mexican spice mixture and mix thoroughly. Simmer until almost all the water has evaporated. Take some of the filling on a fork or spoon, taste it to see if you need to add more spices.

Salsa (sauce)

Meanwhile, make a salsa with diced avocado and tomato, freshly squeezed lime juice, olive oil and fresh cilantro. Season with salt and pepper to taste.

Add grated cream cheese, salsa and shredded lettuce to the minced meat filling and mix thoroughly. Place the finished filling on top of the tortillas.
